Here is the best treat you can make for a party, your family, a gift for your kids teacher....
Now, I have heard so many rave reviews on this one, I am sharing it again! Many of the people who made this and gave it as a gift, had requests on how they made these!! The hard part when sharing the recipe, is that you want it to seem like you worked really hard on it, but, YOU DIDN'T!



Heidi's NUTZ!
Put raw nuts in a bowl.... as many and any kind you like!
drizzle with maple syrup
stir
put on cookie sheet with parchment paper...
sprinkle with sea salt and bake for 20 minutes on 350
vwaallah! let them cool and put them in a cute bag with a cute bow and its a great gift!

Want to shake it up a bit? Take 1/2 of the nuts and sprinkle with Tamari then bake and mix. You may omit the salt if you choose to do it that way!

I am able to forgive.... but does that mean I will forget?


It all sounds good..... all this forgiveness. Lets be honest though, do we ever forget? Does thinking about the hard ..... really hard moments ever go away? I don't want to be one of those people that holds on to the past, However, the "stuff" creeps back into my life most days. I know time heals the wounds, and each day I think less and less of the hard "stuff".

I see the world differently than in the past. I am loving more, seeing more, feeling more. That must mean I am living more of a conscious life. One of my life lessons, simply living here in the moment.

Something that really helps me in times of difficulties is focusing on my breath, eating well, and excersize.

If I wasn't able to forgive......


If I wasn't able to forgive, I don't know if I would ever have known this love that I am receiving now.

As a matter of fact, my husband and I were not living together much of this summer. Now, we will be celebrating our 14th wedding anniversary.
Love is a primary food that we all desire. When I am not receiving the love that I want and deserve, I over eat. Plain and simple. Now, that I am in a better place with my relationship, I crave less.

Primary food consists of .... career (or volunteer work), loving relationships, physical activity and some type of spiritual belief... whatever that means to you. If you are in balance with all of the "primary" foods, you will have more balance in the foods that you actually eat. So, I ask you to pay attention to your relationships with exercise, loving relationships, career and God. Does one need to be fed more?

Tomato soup.... yummiest you have ever had!


Any chance I get, I include my children in the harvesting of my veggies! This is Tommy right out of bed! I told him he can have his pancakes after he gathers the ripe tomatoes! He loves his pancakes, so, he gathered this batch pretty fast!
Since I love to eat seasonally, and I love to have a nice bowl of warm soup on these chilly evenings, I thought it is the perfect time for some Tomato soup....... this recipe is just as good as the butternut squash recipe!!

Tomato soup - with coconut milk!

10 nice sized tomatoes. cut into quarters (if you do not have fresh from the garden, you can use oven roasted from a can. (I prefer organic)

2 lg onions. cut into quarters

olive oil

1 can coconut milk

dried basil, sea salt & pepper to taste

splash of balsamic vinegar

Lay the onions and tomatoes on a cookie sheet and drizzle with olive oil. Sprinkle basil salt and pepper on them. Roast chopped onions with tomatoes for 15 min @ 350 . Transfer to a stove top soup pan. Add in coconut milk. Bring to a simmer. Add more spices if needed and vinegar to taste. Use Immersion blender to reach desired consistency. I love how simple this is and that this recipe has very few ingredients!! Served with grilled cheese and you have got a happy family!

Tis the season for Soup!


I love having a nice bowl of warm soup when its a rainy fall day. I also like to make a soup catered to the season.
The best and healthiest way to eat is what is in season and local!

I made this butternut squash soup today.... having a bowl of that with a slice of my friend Lizz's bread hit the spot!! Here it is!

(I double the recipe)Not the butter part

Butternut squash bisque
This soup is simple, rich and easy to make. I use organic ingredients as much as I can.
1/2 cup butter
1 onion chopped
4 celery stalks

2 big carrots
1 butternut squash, peeled and diced
3 cups chicken broth (or veggie broth)
1 cup milk
salt and pepper to taste.

Melt the butter in a 4 qt. saucepan. Add the onions, carrots and celery and saute for 10 minutes. Add the butternut squash and chicken broth. Bring to a boil, lower heat to medium, cover and cook for 25 minutes until the potatoes are very tender. Puree the potatoes in a blender (in small batches) or with a hand-held immersion blender. Stir in the milk. Season to taste with the salt and pepper. Reheat and serve.

IF YOU HAVE AN IMMERSION BLENDER (HAND HELD) No need to dice the veggies!!! They are all going to be blended anyway!

I like to roast raw sunflower seeds and add them to the top.... adds a little crunch and YUM.
